George Miliotes is the Director of Beverage & Hospitality for The Capital Grille restaurant group and is responsible for the development of its award-winning wine list. The grandson of Greek immigrants, George began his passion for food and wine growing up in Florida where his family owned a specialty market and cafe which became a gathering spot for local chefs. He entered the restaurant business and his early work creating wine lists for an area restaurant earned him Wine Spectator magazine's “Best Award of Excellence" for four consecutive years (1988 through 1991). Miliotes later became the general manager of Walt Disney World's California Grill, where he not only created another award-winning wine list, but also one of the first wine lists in the U.S. to offer 100 wines by the glass. Miliotes joined The Capital Grille in 2007 and travels through the country conducting tastings and wine education seminars.

Miliotes continues to study wine to this day making annual trips to winemaking regions around the world.
