Wes Jones, Khatera Ballard and Jackson Smith started Honeysuckle Gelato in the spring of 2011. Honeysuckle Gelato wholesales gelato and sorbet to restaurants and specialty markets, caters weddings and special events, and operates a food truck. The vision of Honeysuckle Gelato is to "combine the rich and smooth texture of gelato with the decadent flavors and desserts of the South" and their products are best described by their tagline, “southern-inspired gelato.”
