Vegetable oil is a triglyceride that is extracted from a plant. This means that a plant's oil is only in liquid form when it reaches room temperature, and vegetable oil that is in substantial form when at room temperature is referred to vegetable fat. Many parts of a plant can yield oil, but when we are talking about using the oil for commercial purposes, the oil that is extracted is mainly from the seeds of the plant. Many vegetable oils found on the shelves of common food markets are not from a particular plant, but a mixture of various types of plants.

This study was published in the Journal of the American Medical Association.
