Thanksgiving is one of the best holidays for food, but it can also be monotonous. Often the same recipes are made over and over again -- and nothing is more commonly copied than the Thanksgiving turkey. Traditions are great, but isn't it time to mix it up?

We talked to some of the country's best chefs about what they do with their birds. The answers range from cooking the parts separately to confit'ing the legs to frying the whole bird.
