Recession Recipe: Barbecue-Style Pizza

The purpose of the recipe was to find a creative way to use all the leftover turkey from the big day, but in a non-holiday setting, I'd go ahead and substitute chicken for turkey.

This episode was shot in 2009 around Thanksgiving - the purpose of the recipe was to find a creative way to use all the leftover turkey from the big day, but in a non-holiday setting, I'd go ahead and substitute chicken for turkey, as it's usually more accessible and a bit more traditional for this kind of pie.

This recipe also allows us to use the ceramic tiles we bought with Scott, who taught us how to make the $7 pizza oven! This video was made before we met Scott, but the recipe below has been adapted with his dough and his technique. Feel free to use the technique mentioned in the video or the one in the recipe, both will yield you a delicious pie!

E. Bites BBQ Pizza

**this recipe requires 14 unglazed ceramic tiles

INGREDIENTS

Dough

-21 oz all purpose flour
-14.3 oz water
-0.5 oz salt
-0.25 oz yeast

pie

-1 bunch cilantro, chopped
-1/2 cup olive oil
-1/2 cup plus 2 Tbsp Bar B Que sauce
-1 cup shredded chicken or turkey
-1/4 red onion, sliced
-1 1/2 cup shredded mozzarella
-1/2 cup shredded gouda

PROCEDURE

Night before:

-Mix dough ingredients and let rest for 30 minutes. Knead the dough for 4-5 minutes, then place it in a large bowl. Cover the bowl with a wash-cloth and let the dough rise for 1-2 hours. When done rising, split dough into 4 even pieces. Roll each piece into a ball and set in airtight container in refrigerator overnight. Remove 2 hours before baking.

Day of:

-Rinse and dry tiles.

-Set top oven rack on top oven rung. Set bottom rack about 6 inches below. Place 6 tiles upside-down in the middle of the top rack - it'll form a big rectangle. Set 4 tiles on bottom rack so they form a square. On either side of the oven, place 2 tiles so they're at a diagonal facing inward. You've now made your pizza stone!

-Turn oven to 500 degrees and give it about an hour to get hot.

-While oven is heating, make cilantro oil: in a food processor or blender, combine 3/4 bunch of cilantro (chopped) olive oil and salt (to taste) until you have a thick puree. Set a sieve over a bowl and pour the mixture into the sieve letting the oil drip into the bowl. Let it sit until the oven is heated.

-Take shredded chicken or turkey and coat with 2 Tbsp bar-b-que sauce. Set aside.

-Chop 1/2 onion into thin rings. Set aside.

-Flour the back of a plate or cookie sheet and use it as a base to stretch out your dough.

-Spoon 1/2 cup bar-b-que sauce onto the crush. Top with onions, chicken, mozzarella and Gouda. Sprinkle with red pepper flakes.

-To move the pizza to the oven: slide the pizza into the oven on top of the 4 tiles on the bottom rack. Bake pizzas in the oven for 15-20 minutes or until crust is browned and cheese is melted.

-Top with remaining cilantro. Recipe makes 2 medium pizzas.
