It’s time to rethink the banana.
All you need is a freezer and a blender to transform the potassium-, serotonin- and fiber rich fruit into the creamiest, most healthy treat we’ve had all year.
We scoured the internet for delicious ideas, but really, you can’t go wrong: peel and slice some slightly overripe bananas and freeze them; then mix in a blender until it's the consistency of soft ice cream. The result is vegan, dairy- and gluten-free, but you'd never guess it.
Experiment by adding other frozen fruits, extracts such as vanilla or peppermint to give it a punch, spices such as garam masala or pumpkin pie spice to add depth, or nut butters to enrich it, and freeze the leftovers for later (keep in mind that some of these might refreeze hard, so let it sit on the counter for a few minutes before scooping).
As a bonus, try pouring the mixture into a popsicle mold and take them on the road.
You'll never look at ice cream the same way again.
