Recipe Of The Day: Caesar Salad

A lighter take on the classic.

Caesar salad's one of those classic dishes that's never going away. It's a staple on any Italian-American menu. The traditional chicken Caesar with buttered croutons will always hold a special place in our hearts, but these days new twists on the classic are grabbing our attention. These variations are lighter, yet have the same bold flavor.

This Caesar salad recipe omits the heavier egg yolk and replaces it with silken tofu in the dressing. The croutons also get swapped out for golden pan-fried tofu. The effect is an equally creamy and rich salad with a lot less fat.
