More often then not, people who love food credit the alpha females in their lives for instilling in them the "taste" (if you will) for home cooked goodness. Turns out, I am no different then most people. Nothing tastes better to me then a meal cooked with love by my mom or one of my fabulous grandmothers who taught me to cook, eat and pander for attention. Need evidence? PLEASE SEE: my momma, the original gangsta. Love me? blame her! Hate me, blame her even more!!

My mom's chicken Parmesan is a tried and true staple in our house. I happily pass it on to you and hope you'll pass it on to you and yours!!

Suzy's Chicken Parm


INGREDIENTS

-4 boneless, skinless chicken breasts

-3 eggs, beaten

-2 cups Italian breadcrumbs

-24 oz jar of marinara sauce

-1 1/2 cup part skim mozzarella cheese, shredded

-1/4 cup cheddar cheese, shredded

-1 Tbsp Parmesan cheese

-butter

PROCEDURE

-Preheat oven to 350

-Rinse chicken breasts and pat dry. Place on a cutting board and cover with a piece of plastic wrap.

-Using a hammer or mallet, pound the chicken thin, just thin enough so the fibers aren't broken. Set chicken aside.

-In a bowl, crack 3 eggs and whisk with a fork.

-On a large plate, spread 2 cups of breadcrumbs.

-Prepare chicken: Dip each chicken breast in egg, then in the breadcrumbs. Coat on both sides. Place breaded pieces on a clean plate. Repeat for each piece of chicken.

-Over medium heat, melt 1 to 2 Tbsp of butter. Saute one piece of chicken at a time, about 3-4 minutes on each side or until the crust is golden brown. Remove to clean plate.

-Repeat sauteing step, adding a little more butter each time.

-One each piece of chicken is sauteed, butter a large Pyrex (glass baking dish) and place chicken inside, one single layer.

-Pour marinara sauce over chicken. Top with cheese. Bake in oven for 25-30 minutes, or until cheese is nice and bubbly.

Serve with pasta, with salad, on a sandwich or alone. Save in tupper-ware in the fridge
