Why You Should Add Almond Butter To Your Chicken Soup

It's delicious AND healthy.

We're about to say something that borders on blasphemy: sometimes, we're just tired of chicken soup.

We know that chicken soup has been there for us through the worst of colds and on the coldest of days. It's comforted us in ways that mac and cheese only wishes it could. We feel bad for seeming ungrateful. But, there are times when the thought of another bowl of chicken soup leaves us feeling entirely uninspired.

Just when we thought we were going to call it quits on chicken soup, the fine folks at Everyday Food had the good sense to add almond butter to a pot and they've got us feeling excited about this dish again. If you haven't given in to almond butter yet, this would be the appropriate time to try it. Almond butter is like peanut butter, but with a more subtle flavor. We've always loved almond butter on toast for a quick breakfast, but we've never considered adding it to our soup recipe. We have now been enlightened.

The addition of almond butter not only infuses the soup with a healthy fat, making it an even better-for-you meal, but it also gives it an African flair, making it absolutely delicious. Two birds, one nut. Try it. (See how it's done in the video above.)
