We love the classic, but sometimes we can't help but mess with perfection.

If there's one thing that can make meringue a little sweeter, it's definitely coconut. Sweet coconut mixed into light and airy egg whites is a combination made for the gods, and it's also known as coconut macaroons. (Not to be confused with the similarly spelled French macarons, which are also made with egg whites.) Coconut macaroons don't take a lot of ingredients to make their magic happen -- just coconut, sweetened condensed milk and egg whites -- but they sure do use those few ingredients well.

While we always like the classic and straight-laced coconut macaroon, we can't help but mess with perfection -- especially when it means chocolate, strawberry and even raspberry variations. Here are 16 macaroon recipes you're going to want to try this spring.
