Divinity: What Is It, Anyway?

Have you heard of divinity? We're not talking about church or religion. We mean the sweet candy. It may not be as well known as other holiday candies like fudge, brittle or bark, but divinity is rather popular in the South, where you'll often see it studded with pecans. It's a meringue-based candy that's very much like a nougat.

Divinity has only been around since the early 20th century. It came into popularity about the same time corn syrup was invented by Karo -- it's a possibility the recipe was actively marketed as a way to use the new product.

Divinity is made with sugar, corn syrup and egg whites and may include mix-ins like nuts or coconut and flavorings like vanilla or peppermint extract. It's sweet, chewy and perfect to share with family and friends during the holiday and to give as gifts. Just one tip, make sure to make divinity on a dry day. The meringues will not set properly on a wet day.
