Europe is about to get its first taste of the Cronut: Dominique Ansel has announced that he's expanding across the pond, opening a location of Dominique Ansel Bakery in London late this summer. (He's not yet sharing the specific location.) This slow, steady expansion plan -- one new bakery abroad a year, as Ansel opened in Tokyo in June -- is quite smart. He could have easily cashed out and opened a shop in every New York neighborhood, and major metropolitan city, by now (not to mention the opportunity for Cronut vending machines, etc.), but unlike certain cupcake empires, Ansel's in this for the long haul.
