Last week I was running an errand on West 3rd and passed by Springbone Kitchen. I was immediately struck by the facade; vast clear windows set in a crisp white trim, and a delicate sign with swooping teal cursive letters. It stood out among the other store fronts and immediately intrigued me.

As I continued to walk by I saw "100% gluten free" written on the windows. "Okay," I thought, "I've got to give this place a try."

On my way back from my errand I decided to stop in. I was immediately greeted by a man at the front counter and explained to him that I have celiac disease. He graciously went through some of my routine questions about how they verify the purity of their supply chain and who they work with, and of course whether or not they were gluten free or truly celiac safe. Sensing my apprehension and reluctance to believe in something that seemed too good to be true, he offered to see if the chef might be available to speak with me.

I was touched by the gesture, and sure enough, the chef came out to meet with me and answer my questions.

The chef, Andy, was so kind and went into such detail about the food that I immediately felt confident enough to eat there. I am so appreciative he took the time to speak with me. It can be really easy to get caught up in the difficulties of having celiac disease, and sometimes I think that the restaurants who are really doing it right aren't recognized as much as they should be.

After meeting with Andy I really felt like I was in good hands and a week later I stopped in for some breakfast. Deliciously soft scrambled eggs with toast and some chia pudding for later. It was so good- and I'll confess, I came back for lunch that same day!

For my second visit I ordered the Viva Springbowl- it was so insanely good!

And somehow, even more amazing than the food (which was incredible), Andy remembered me! If that doesn't make you feel safe as a diner with celiac disease, I don't know what would. In a world of pseudo-gluten free restaurants that oftentimes don't care enough to know about your disease, that meant so much. So joining my list of gluten free favorites is Springbone Kitchen! Thank you for being so kind and doing gluten free food such justice!
