How to make Indian Veggie Stew on the Instant Pot

I love stew and this veggie stew is one of my all time favorites. This dish can be served with bread or rice. You can add as many veggies as you want and make it as spicy as you want.

Ingredients:

  • 1 potato
  • 1 cup of broccoli
  • 1 cup carrot
  • 1/2 cup peas
  • 2 cups water
  • 1.5 coconut milk
  • 2 tablespoons coconut oil
  • 2 teaspoons turmeric
  • 1-2 teaspoons red chili powder
  • 1 teaspoon cumin seeds
  • 2 tablespoons oil

Directions:

1. Peal and cut potato into small peaces.

2. Cut veggies and set aside.

3. Turn the manual button on the instant pot and keep it at 8 minutes.

4. Add 2 tablespoons oil.

5. Add vegetables and mix together.

6. Add spices one at a time and mix together.

7. Add 2 cups of water.

8. Add 1.5 cups of coconut milk .

9. Put lid on instant pot and let it cook for 8 minutes with a natural pressure release.

10. Open lid after it’s done and add 2 tablespoons of coconut oil and mix well.

11. Add a pinch of salt.

12. Serve and enjoy.
