When we think of spring, we think of asparagus. These green stalks are one of the first things to pop out of the ground after winter’s long hibernation. And even though it makes our pee smell weird, it is beloved.
That’s why its important to know how to store it right.
If you just stick your bunch of asparagus in the crisper drawer, you’re doing it wrong, and you’re not going to get the most out of these green stalks. Chances are, the cut edges will start to dry out on you ― which means you’ll have to cut off more than you should ― and the tips can get soft and mushy.
It doesn’t have to be this way. If you store your asparagus right, it can stay fresh in your fridge for up to a week, if not longer.
Treat asparagus like cut flowers or fresh herbs and give them some water to keep them hydrated. Instead of storing asparagus with the other veggies in the drawer, place it in a cup or bowl of water in the fridge. And if you really want to maintain the most freshness, cover the top of the stalks with a plastic bag.
Think about it: when you buy asparagus, it’s usually standing upright in a tub with water at the bottom, so why wouldn’t you do the same thing at home? When the water gets cloudy, change it out with fresh water. It’s that simple.
