This is a great quick and easy recipe for a crowd. You add a few strategically placed cuts to a loaf of bread and fill it with goodness like carne asada style steak, jack cheese, red onions and fresh tomatoes and bake it to melty cheese perfection. You could even grill the steak ahead of time to make pulling this together even easier.

Pico de Gallo

Impress guests with this homemade Pico de Gallo, which is a mix of fresh tomatoes, onions, jalapeños, poblano peppers and lime juice. To save time, you could also use the pulse function of your food processor instead of chopping everything by hand. This is great on tacos, enchiladas or even burgers or add in our favorite Guacamole recipe (see below) and serve as a pair of dips with lots of crispy tortilla chips.
Here is our favorite feedfeed original Guacomole Recipe:
5 avocados, cut in half, pits removed (but save a few)
1/2 small sweet onion, finely diced
4 on the vine tomatoes, seeds removed and diced
1 jalapeño, finely diced (keep seeds in if you like spice, remove if you want less heat)
3-4 limes
salt and freshly ground black pepper
Add the avocados to a mixing bowl and mash with a potato masher or fork until smooth. Mix in the onions, tomatoes, and jalapeño and season generously with salt and pepper. Add the juice of three limes and taste; adding more lime based on your preference (I tend to like lime heavy).

Mango Jalapeño Popsicle Margaritas

Do yourself a favor and make these mango popsicles with jalapeño infused tequila tonight, then serve them in a proper Margarita for 'dessert' on Cinco de Mayo! If you don't have popsicle molds, mini paper cups and chopsticks can work in a pinch.
