.5 oz. 2:1 Simple Syrup
Cracked ice
2 oz. Champagne or Sparkling Wine
1 Lemon Peel for Garnish

Combine the gin, lemon juice and simple syrup in a cocktail shaker or mixing glass. Fill with cracked ice and shake. Add the Champagne to the shaker. Strain into the Collins glass. Twist the peel over the surface of the cocktail and drop it in the drink to serve.
