Winter's rough for many reasons. It means the absence of summer berries, delicate leafy greens and sweet corn. Plus, so much snow. But at least this frigid season gives us citrus, and for that we're grateful. The hearty flavors of winter, with its earthy root vegetables, benefit from the brightness a little citrus. They are flavors worth preserving, and so we make marmalade.
