Christina Tosi's Momofuku Milk Bar has been present on the New York food scene for about five years now -- that's considered ancient in the food world. Despite the bakery's age, the popularity of Tosi's famous compost cookie and crack pie have not faded -- actually, they've grown, which is why you can now find a Milk Bar in six different neighborhoods of New York.

That's great for New Yorkers, but if you don't live in the tri-state area, your best chances of getting a taste of Milk Bar's bright green grasshopper pie is to make it yourself. You'd think it'd be easy enough to recreate if you own the Momofuku Milk Bar Cookbook, but there's just one little hiccup: the ingredients. Citric acid is used to enhance the flavor of dishes. In a pinch you could use lemon juice, but citric acid is flavorless and doesn't add any liquid to your recipe -- a critical point in baking. No, you don't need these chocolate chips to make any of the recipes in the Milk Bar cookbook, but Tosi likes the mini chips because it means you get "an entire chocolate chip in every bite of any cookie or cake they're used in." That's enough reason for us.

Grapeseed oil is a secret ingredient in restaurants. It's a great oil that can be used in place of olive oil in recipes to save money -- of course, the flavor isn't quiet the same. Tosi uses it in her recipes too. While many supermarkets are now carrying it, if your area isn't yet hip to the oil we've found an easy way for you to get it into your kitchen.

Nut Flours

Nut flours are basically just nuts ground to flour consistency -- mostly almond and hazelnuts. These are not cheap -- unless you have a Trader Joe's near you in which case you can get a pound on almond flour for $4 -- but they are tasty.
