With Carnival almost over and Mardi Gras a day away (on March 8th), I have been thinking about the spicy and delicious food that party-goers are going to enjoy -- among a host of other festivities. Of course Jambalaya, Po-Boys and sweet Beignets are obvious choices but another traditional favorite is the hearty and delicious soups. As a meal or a side dish, "New Orleans offers the most distinctive collection of soups anywhere in the nation," according to Cajun Chef Ryan and this is obvious from the flavorful options of crawfish bisque, gumbo, and turtle soup.
