With the Falling leaves clogging streets, backyards and parks across the town and Vibrant fall colors everywhere, the beginning of autumn season is clearly visible.

With all the neighborhoods decked up with halloween decorations and all the supermarkets stuffed with those spooky costumes, all the farmhouses organizing the pumpkin-picking and carving events, no one can escape this most talked about squash in the season.

Fall is the best time to enjoy pumpkin. Starting from the pumpkin soups and curries to the best of the pumpkin pies, everyone is trying to serve this special squash to their friends and families. Going by this pumpkinicious trend, I decided to get this giant squash in my kitchen too.

This fall season, I tried to make a snack rather than going for a time consuming curry or a pie.The quick energy no bake snack is sure to charge your batteries up when you feel exhausted and are in dire need of a quick bite. Keep them ready in your refrigerator over the weekend and enjoy it during the hectic weekdays when you come home all drained out.

Kids come home completely exhausted after school and nothing could be better than this amazing snack which has lots of Pepitas, Chia seeds and Raisins.

No Bake Superfood Rich Pumpkin Energy Bites

Ingredients:

1 cup uncooked dry old-fashioned oats1 cup toasted coconut flakes1 cup toasted pepitas (pumpkin seeds)1 cup Raisins1/4 cup honey1/4 cup pumpkin puree1 Tbsp. chia seeds1 tsp. ground cinnamon1/4 tsp. ground nutmegpinch of salt

DIRECTIONS:

  1. Combine the Raisins, honey, pumpkin puree, chia seeds, cinnamon, nutmeg and salt in a food processor, and pulse until smooth and combined.
  2. Transfer the mixture to a large bowl, and stir in the oats, coconut flakes and Pepitas until evenly combined. Cover and refrigerate for at least 30 minutes.
  3. Once the mixture cools down nicely, shape it into your desired size of energy balls using a spoon or scoop. Alternately, you can line a small baking pan with parchment paper, and press the mixture evenly into the pan, let it cool, and then cut into bars.
  4. Store covered in the refrigerator for up to 2 weeks. (Storing them in the refrigerator especially helps the energy bites hold their shape.)
