The other night whilst watching tv and flicking through the channels, I stumbled upon something called 'The Eric André Show' and have to say that I have never seen anything quite like it before in my life.

Apart from that ultra-weird kids show, 'Yo Gabba Gabba!' I cannot recall anything else in the past few years on tv that has left me speechless throughout.

I'm telling you guys, it's off-key.

I mean, everything on Adult Swim is off-key but this was OFF-KEY!

It was car crash material in the sense that I just couldn't seem to look away, man!

If not for the fact that one of the main characters was Lincoln off 'Broad City' (which I absolutely love), I'd probably have turned the telly off and carried myself to bed, thinking I'd started on the Christmas eggnog a few days too early.

After the show had finished and the onslaught of tv ads managed to snap my mind out of the sheer state of confusion it had been thrown into, I felt that I needed something comforting to eat.

It was already quite late so I didn't want to be up all night cooking but wanted something soothing and sweet. I therefore decided to whip up a batch of these delicious paleo muffins for comfort.

They were ready in under 30 minutes, moist, soft, sweet and really did the job. Even whilst baking, that instantly recognizable and soothing smell of home-made cakes permeating from the oven already had me feeling warm and fuzzy all over.

Once out of the oven, my first bite into the first of the soft paleo muffins was heaven.

The warm, sweet blueberries tasted delectable, the hint of bananas were just the right balance, and did I mention how incredibly soft the muffins were?

Ram packed full of nutritional goodness, these gluten-free muffins not only taste great but are also mega healthy so that with every delicious mouthful, you can be rest assured that you are eating clean.

The juicy blueberries and bananas included in the recipe aren't just there to add flavour, oh no.

Known as the 'grandaddy' of the superfoods due to being full of antioxidants, fibre and vitamins, studies have found that blueberries have a wealth of health benefits. They have been found to improve the memory, lower cholesterol, protect against ageing and cancer and as the fibre helps to keep you feeling fuller for longer, can also assist with weight loss.

Bananas are one of the most popular fruits to mankind.

Not only are they utterly delicious and versatile, but they also contain high levels of potassium and vitamins, as well as antioxidants and contain virtually no fat. Rich in fibre, bananas are another great way to assist in weight loss.

Like I said, I'm not really that much of a cake eater but I'll definitely be making these more often, and next time just in time to eat before the next episode of 'The Eric André Show' starts! ☺️

Paleo Banana & Blueberry Muffins

Ready in under thirty minutes, moist, soft and sweet, these paleo banana and blueberry muffins really hit the spot.

Ingredients

3 ripe bananas
1 cup blueberries
1 cup almond flour
1 cup coconut flour
1/4 cup honey/syrup
1/4 cup coconut oil
6 tbsp arrowroot powder
2 eggs
2 tsp vanilla bean paste
1/2 tsp baking powder
1/4 tsp salt
Handful almond flakes, to garnish

Instructions

Pre-heat the oven to 180c and fill a muffin tray with muffin cases.
Mix the dry ingredients together in a bowl.
In another bowl, mash up the ripe bananas with a potato masher before adding all the wet ingredients and mixing together well.
Combine the dry ingredients with the wet ingredients and just for a few minutes, continue to mix until all ingredients are well blended.
Fold in the blueberries (leaving out a handful to garnish afterwards), before pouring the mixture into the individual muffin cases.
Place the muffin tray into the oven for approximately 20 minutes or until a knife placed in the middle of one of the muffins comes out clear.
Garnish with the almond flakes and remaining blueberries and enjoy!
