Plant-Based Meals: Vegan Sandwiches, Anyone?!

Many people are looking for things that they can put in a sandwich when going plant-based. Tempeh is a good choice. If you want something mouthwateringly delicious, yet still healthy, this sandwich will not disappoint!

Many people are looking for things that they can put in a sandwich when going plant-based. Tempeh is a good choice. Just saute some onions and cabbage, add the tempeh, which has a meat-like consistency, and a little sauerkraut. Place it between two slices of good quality rye bread after topping with "cheese" and a vegan ranch dressing, and you are minutes away from the perfect vegan sandwich. If you want something mouthwateringly delicious, yet still healthy, this sandwich will not disappoint!

Vegan Reuben

1/2-1 cup tempeh, cut block into 4 pieces, then sliced the other way to make 8 thinner squares (I like Rhapsody brand)
2 onions, sliced into thin half moons
1/2 cup cabbage
1 cup water
1/2 cup sauerkraut (I like Thirty Acre Farms brand)
2 tablespoons sauerkraut juice or 2 tablespoons apple cider vinegar
1 teaspoon soy sauce
1 tablespoon minced, fresh parsley
Optional: Vegan ranch dressing & 1/4 cup Daiya cheese
Rye bread

Vegan ranch dressing: 1/2 cup of Follow Your Heart Veganaise, 1/4 cup sugar-free ketchup, 1/8 cup soy sauce

Heat skillet over medium high heat. Add a few drops water, lightly saute onions until shiny & soft. Add cabbage and sauté 2 minutes.

Add tempeh and water to almost cover. Cover pan, reduce flame to low. Simmer 15 minutes.

Add sauerkraut, it's juice and soy sauce. Simmer 5 minutes.

In another skillet, heat to medium-high. Take several slices of bread drizzle with small amount olive oil on one side, place that side down in the skillet and top with tempeh, onion, cabbage mixture, optional vegan ranch dressing and small amount Daiya non-dairy cheese. Place another slice of bread on top. Continue to heat sandwich in the skillet, turn after a few minutes, drizzle olive oil on other side, then brown opposite side.

I put a heavy pot that is smaller than the fry pan, resting right on and pressing the sandwiches while they are browning. This will mush them together to hold everything in place.
