Publican, Big Star Team Up For 'The Bruery'

Can't decide between the Publican and Big Star? Now you can have your pork belly (and ceviche) and eat it too. That's because for one night only, the kitchen crews from Fulton Market's carnivore-friendly Publican and Bucktown's trendy taqueria Big Star will morph together and form a collaborative beer dinner.

This buzz worthy meal hosted by the Publican will feature six courses; three from each of Paul Kahan's hot spots, and a selection of craft draughts from Orange County brewery The Bruery, that will tease your taste buds throughout each portion of this shindig. Reservations are strongly encouraged, as these craft beer dinners on rotation about once a month, usually sell-out.

The menu: This special menu will pull flavors (and beers) from both restaurants. The first course will feature jonah crab and spanish mackerel ceviche, tropical fruits and preserved lime and crisp masa, paired with Orchard White (Big Star).

For the second course, duck prosciutto, basil and asparagus, paired with Saison Lente (The Publican).

The third course will feature romeritos and fried oyster, shirred egg, mole colorado, yuca tortilla, paired with Mischief (Big Star).

The fourth course will be bass and belly with spring vegetables, paired with Imperial Orchard White (The Publican).

The fifth course will feature braised goat, cassava and plantain hashbrowns, grilled spring onion, roasted peanut-apricot salsa, paired with Rugbrod (Big Star).

The sixth and final course will feature almond, cinnamon, chocolate and lime, paired with Quadruple (The Publican).

With a carefully designed menu from the kitchen helms at both the Publican and Big Star, and exactly the same amount of beer courses to tap into, it just might be perfectly acceptable to fully indulge. Go ahead, pig out.
