Quick and Amazing Pizza Sandwich

It was my first day working from home in ages, and I was starving. It was Friday, which somehow in most people's minds, including mine, has become Pizza Day (why is that?).

Go out for pizza? No way. Make a crust from scratch? Hell no, not today. Then I remembered the especially delicious pizza I'd had one day in Corning, New York. It was covered in pepperoni and pepperoncini peppers. YUM.

What did I have? Some stale bread, a tomato, and "fresh" Mozzarella cheese. Oh yeah, there's some Applegate Farm pepperoni and a half-empty jar of pepperoncini peppers!

And thus, a sandwich was born. It was good. I won't tell you how many pieces I ate, but it was an episode of gluttony of the best sort.

Of course you can adapt this 1,000 ways, just like regular pizza.

Quick and Amazing Pizza Sandwich

Ingredients:
  • Bread slices
  • Garlic
  • Olive oil
  • Fresh tomato or sauce
  • Mozzarella cheese
  • Pepperoni
  • Pickled pepperoncini peppers
Directions:
  1. Turn the oven on broil.
  2. Toast the bread.
  3. Rub the toasted bread with raw garlic. Add some good olive oil.
  4. Slice a tomato and put it on the bread. Slice the cheese and place on top of the tomato. Cut up the pepperoni and add on top of cheese. Add pepporocini peppers on top of that.
  5. Broil until the cheese is melted and it looks yummy.
  6. Devour.
By the way, this whole process takes less time than it would take to call in a pizza and have it delivered!
