Quinoa Detox Salad

This potato quinoa salad is a great way to detox your body without feeling deprived. Purple potatoes and quinoa not only fill you up, but are also full of important nutrients like fiber. Hemp hearts and almonds are packed with protein and add a nice texture to this salad. The tasty flavors in this salad come from orange, honey, parsley and coconut oil, which are all powerful detoxifying ingredients that will leave you feeling refreshed.

Serves 4

• 8 oz. purple potatoes, cut into 1/2 inch pieces
• 2 garlic cloves, minced
• 1/2 cup quinoa
• 2 scallions, thinly sliced
• 2 Tbsp. extra-virgin olive oil or coconut oil
• 2 Tbsp. pure honey
• Juice of 1 large orange
• 1 tsp. fresh orange zest
• Sea salt and pepper, to taste
• 1 Tbsp. finely chopped fresh parsley
• 2 scallions, thinly sliced
• 2 Tbsp. hemp hearts
• 2 Tbsp. raw almonds

Put potatoes in a large pot and cover with water. Bring to a boil over medium high heat and cook until potatoes are tender, about 15 minutes. Drain and remove from heat.

Meanwhile, cook quinoa according to package directions. Remove from heat; add in coconut oil and mix well. Fluff with a fork and let sit for 10 minutes.

In a large bowl, combine potatoes and quinoa; drizzle with honey, orange juice, orange zest, salt and pepper. Toss to coat. Add parsley, scallions, hemp hearts and almonds. Serve.
