For the past year, Food52.com readers have been voting in weekly showdowns of reader-submitted recipes on a given theme. The winning recipes of each week will end up in Food52's upcoming cookbook, along with bios of the people who submitted them (Food52 explains the process in simple detail here).

Food52 and its co-founders Amanda Hesser and Merrill Stubbs have invited you, fun-loving HuffPost Food readers, to vote on the contest for week 3 (of the second year).

Week 3's showdown is for the best use of summer squash.

Zuccaghetti

Zucchini and summer squash, if sliced thinly enough, resemble spaghetti -- or, zuccaghetti! -- and make for a tender, refreshing salad. The notion of zucchini spaghetti has popped up here and there over the past couple of years. Sometimes the strands are dressed with oil and chilies, sometimes with a vinaigrette and herbs. Here dymnyno enrobes the thin, dewy zucchini in a tarragon vinaigrette rounded out with cream (add it to taste). This is a salad that gets even better with a little sitting. Dymnyno has you rinse the zucchini after salting -- we found that you can skip the rinsing. But don't skip the eating! - A&M

Summer Squash Couscous with Sultanas, Pistachios and Mint

Amanda and Merrill's notes on "Summer Squash Couscous with Sultanas, Pistachios and Mint" at Food52.com:

This dish is supposed to serve four, but we wouldn't be above polishing off the entire thing among just the two of us. It's well-balanced, with tart, sweet and savory playing off each other with every bite -- not to mention the fact that it's beautiful to look at, studded with brightly colored chunks of squash, golden sultanas and green flecks of mint. The Internet Cooking Princess recommends serving the couscous at room temperature, but we think it's great hot, cold and all temperatures in between. - A&M
