When you see something come up a few times, like sweet potato and feta, and you keep imagining it, and then you wonder what to add, and then you make it... and the result is just one of the best salads ever... well this was it! My family doesn't love cheese - well my grandmother certainly doesn't - so when she and my aunt tried this salad and asked how I made it and said they want to make it at a dinner party this week, I knew it was a winner! And it is so unbelievably simple! Such a great one to feast on and easy to whip up if you have guests, as a main salad or a side or just a part of the large feast. Hope you're all enjoying the festive season! ....and that's a lot of exclamation marks in one paragraph... it really is a good salad ;)
Serves 2
1 sweet potato, 200g
few broccoli florets, 150g
50g feta cheese, crumbled (quarter of a packet)
2 tablespoons pumpkin seeds
Dressing
1-2 tablespoons olive oil
juice of half lime or lemon
1 medium onion, finely chopped
¼ teaspoon paprika
½ teaspoon Himalayan salt
¼ teaspoon black pepper
½ teaspoon mixed herbs & chilli flakes
Boil the sweet potato for 10 minutes on low heat in a small to medium pan, then add the broccoli and boil for another 5-10 minutes until both are soft. Mix together the ingredients for the dressing. Drain the water once the sweet potato and broccoli are cooked. Once they have cooled down, add the feta, pumpkin seeds and dressing, and serve.
