The Secret to Frying a Whole Fish

Cooking a whole fish can feel like the same-old methods over and over again. But what about a light fry? We went to Fish Cheeks to learn about an alternative for cooking whole fish.

Ingredients

1 whole Branzino
5 cloves garlic (chopped)
a couple sprigs of cilantro (chopped)
1/2 cup of fish sauce
1 1/4 cup chicken stock
1 oz palm sugar

Method

Deep fry garlic in a wok until golden brown and crispy. Set aside.

Branzino:
Set a deep fryer at 350 F. With a sharp knife, debone whole brazino. Hold the head and tail of the fish when putting it in the deep fryer. Fry the branzino until it turns golden brown. Top the branzino with fresh chopped cilantro and fried garlic.

Fish Sauce Broth:
Simmer chicken stock and water then add palm sugar. Stir until palm sugar dissolves. Remove from heat then add fish sauce.
