Last week we celebrated National Pulled Pork Day with great enthusiasm, but don't let the fun stop there! National Pork Month lasts the full month of October, and I present for your consideration another favorite pork dish -- the pork chop. Pork ribs, pulled pork, and bacon may gain more attention when it comes to pork on your grill or in your smoker, but an expertly prepared moist and tender pork chop is a thing of beauty.

St. Louis Pork Steaks
Mention St. Louis barbecue to most Americans and what comes to mind is ribs. But visit a typical St. Louis backyard in the summertime and you'll likely find something very different sizzling away on the grill: these pork shoulder chops slathered with Maull's, a local tomato-based barbecue sauce.
Sweet and Garlicky Pork Chops
One of the constants in the world of barbecue is the pairing of grilled meats with garlic. Another is the use of sugar- or honey-based marinades to counterpoint the richness of a meat like pork. Put them together and you get this pork chop recipe for Thai-style barbecue.
Grilled Pork Chop "Calzones"
Another popular pork chop recipe is for these grilled pork chop "calzones". Stuff your pork loin chops with cheese, ham, and pepperoni for a classic Italian spin on grilled pork.
