Tommy's Gluten-Free Chinese Dumplings
Filling
1lb Fresh ground pork
1/2 head Taiwan cabbage
Bunch Spring Onion
1 Tbsp Soy Sauce
Thumb of Ginger
Two cloves of Garlic
Two Eggs
Dough
3.5 cups Gluten-Free Flour
1/2 cup Tapioca Flour
Tablespoon of salt
1.5 cups hot water
one egg (optional)
Chilli Sauce / Là Jiāo Jiàng
1/2 cup Rice Vinegar
1/2 cup Soy Sauce (gluten-free if you're hardcore)
2 Thai Chillies (deseeded, diced)
1/2 Fresh Lime (juice)
1 Tbsp Sesame Oil
1 Tsp Coconut Sugar (Brown sugar or honey will also work)
