Ah, dessert. Who doesn't love it? Ah, vegan dessert, you say? That's where things get tricky.

When I first became Vegan I couldn't understand why some Vegan desserts tasted so darn awful. They just never tasted as moist or as rich or - honestly - as good. I had yet to find the perfect Vegan dessert that would replace the chocolate-y void that haunted my newly Vegan soul.

So I decided, "Self - it's time to take things into your own (at the time, very incapable) hands". I wasn't exactly what you would call a good cook (if even a "cook" at all), so this was quite the tall order. But lo and behold, enough time spent in the kitchen tinkering away resulted in a few Vegan desserts that would fool even the most devout dessert lovers.

First up: Banana Chocolate Chip Muffins. What's not to like, right? Not only will these make the crowds go wild but they are incredibly easy to make. They only require a handful of ingredients, most of which you probably have lying around your kitchen.

Try these and tell me you're not impressed.

Vegan Banana Chocolate Chip Muffins*

What You Need: (Makes 16)

2 cups all purpose flour
1 and a 1/2 tsp baking soda

1/2 tsp salt
1 cup sugar

1/3 cup canola oil
4 ripe bananas, mashed - the riper the better!

1/4 cup water
1 tsp vanilla extract
1 cup vegan semi sweet chocolate chips

What You Do:

Preheat the oven to 350 degrees. Lightly grease your muffin tins or use muffin liners.

In a bowl, mix the flour, baking soda and salt. In a separate bowl, mix the sugar and the oil. Add the mashed banana to the sugar mixture, then add chocolate chips, water and vanilla. Finally, add the flour, and mix everything well.

Evenly pour the batter into the muffin tins. Place in the oven for about 30 minutes.
