A classic summer dessert and one of my family's favorites, is Strawberry Cake. The pureed strawberries in the batter make it moist and it's usually better a couple days after it is baked. I felt like adding a bit of a kick to this fresh summer delight. The cake batter recipe would be hard to improve...you know the basic white cake mix/strawberry jello one? So I tweaked the icing recipe to give the finished product a little something extra.
When I'm about to leave the City for a trip, I usually prepare a quick snack to carry with me using the leftovers in the fridge. The first thing I saw was a cup of sour cream so I opted for a dessert (of course!). After a quick research online, I discovered the fantastic food blog of Alexandra Cooks where I found a delicious recipe for the Coffee Cake.
We love a good bunny cake, but these pastel-colored treats are just as perfect for the springtime holiday.
This is a beautifully damp cake. The rye-stout combo, while bold in its own right, hangs back and lets the chocolate notes take center stage.
