Un antioxidante es una molécula capaz de retardar o prevenir la oxidación de otras moléculas. Las reacciones de oxidación pueden producir radicales libres que comienzan reacciones en cadena que dañan las células. Los antioxidantes vienen a ser sustancias que reaccionan químicamente con los radicales libres haciéndolos inocuos y al mismo tiempo impidiendo su creación, que es la causante de muerte celular.

Estos últimos años se ha investigado científicamente el papel que juegan los antioxidantes en las patologías cardiovasculares, en numerosos tipos de cáncer, en el Sida e incluso otras directamente asociadas con el proceso de envejecimiento, como las cataratas o las alteraciones del sistema nervioso. Los estudios se centran principalmente en la vitamina C, vitamina E, beta-carotenos, flavonoides, selenio y zinc. La relación entre estos antioxidantes y las enfermedades cardiovasculares y, probablemente, las cerebrovasculares, está hoy suficientemente demostrada.
Se sabe que la modificación del "colesterol malo" (LDL-c) desempeña un papel fundamental tanto en la iniciación como en el desarrollo de la arteriosclerosis (engrosamiento y dureza anormal de las cubiertas internas de los vasos sanguíneos debido a un depósito de material graso, que impide o dificulta el paso de la sangre). Los antioxidantes pueden bloquear los radicales libres que modifican el colesterol malo, reduciendo así el riesgo cardiovascular. Por otro lado, los bajos niveles de antioxidantes pueden constituir un factor de riesgo para ciertos tipos de cáncer
Si tu dieta es insuficiente en estas sustancias o si tu sistema tiene un exceso de radicales libres (en otro artículo hablé de qué situaciones los aumentan) deberías tomar algún suplemento para destruir los agentes oxidantes. El selenio, el zinc, cobre, magnesio, la vitamina E (alfa-tocoferol), vitamina C (ácido ascórbico), beta-caroteno (pro vitamina A) son algunos de los antioxidantes eficaces que mencionaremos y que protegen a nuestras células de la descomposición.

SELENIO (o selenium): Levadura de cerveza Vegetales (brócoli en particular) Arroz integral y otros granos Ajo y cebolla Salmón, atún, pescados en general Lácteos

ZINC (Zn): Pescados Legumbres Carnes Granos integrales Levadura de cerveza Yema de huevo Hongos Semillas de zapallo, girasol, sésamo Porotos de soja Almendras, nueces, avellanas
SODIO: Trigo y centeno integrales Plantas verdes Zapallo Crucíferas
VITAMINA E: Aceites vegetales prensados en frío (oliva, girasol, maíz, etc.) Cereales integrales Germen de trigo Semillas y oleaginosas Legumbres Avena arrollada
Precauciones: no dar altas dosis en hipertensión arterial, en diabetes o hipertiroidismo; no conviene asociarla con hierro.
COENZIMA Q10: Caballa, salmón, sardinas
VITAMINA A Y BETA-CAROTENO: Vegetales verdes (espinaca, acelga) y amarillos (zapallo, batata, calabaza) Crucíferas Damascos y duraznos Zanahorias Ajo Perejil Espirulina (alga de agua dulce) Hígados
Con la vitamina A hay que tener cuidado de la hipervitaminosis; en cambio el beta-caroteno no da este cuadro, pero no conviene darlo en los fumadores. Los diabéticos y los hipotiroideos deberían evitarlo porque no convertirían el beta-caroteno en Vitamina A.
