Mexican Fiesta Chopped Salad

This salad is colorfully healthy. We made it our own by adding our favorite nutrient-packed ingredients. Serve it at your next dinner party or toss it together for an on-the-go easy lunch.

Ingredients

(1 serving)

2 c baby romaine lettuce, chopped
1 ear sweet corn, cooked
1/2 c black beans, rinsed and drained
1 mini cucumber, chopped
1/2 avocado, chopped
1/2 c pico de gallo
balsamic glaze, to taste

Directions

1. Arrange lettuce in a serving bowl. Add above ingredients in vertical rows.

2. Drizzle with balsamic glaze and serve.

*Add grilled chicken or salmon for additional protein.
