Happy Cinco de Mayo! Today we drink and today we feast.

Although we're mostly going to be celebrating with tequila, it's important that no one drink on an empty stomach. And so, we thought it wise to show some love to some of our favorite taco trucks across the country.

Why?

Because if tacos weren't already delicious enough, now we get to eat them on-the-go and out of funky trucks. Perhaps with a margarita in hand!

Check out these great tacos; from classics served with tangy guacamole, to fusion innovators bathed in Korean BBQ sauce. Hard to believe they come out of a truck!

Kogi Korean BBQ-to-Go (L.A.)(01 of08)

This Korean-Mexican fast food truck, which offers Korean tacos and Korean burritos as part of their menu, was voted in 2011 as LA's No. 1 Food Truck by Zagat. No surprise there though. Chef Roy Choi (formerly of Le Bernardin and 2010 Best New Chef Award winner by Food & Wine Magazine) is behind the Korean-Taco sensation. (credit:KogiBBQ)

Because nothing says Mexican like Korean tacos (at least not in New York) we figured we couldn't leave out Kogi Taco's East Coast rival, Kimchi Taco. Just over a year old , Kimchi Truck is already a staple in Manhattan, feeding hungry New Yorkers every day with their staple Korean BBQ taco. Cheap, cool and serving organic meat, "El Diablo Taco Truck" is pretty much what you would want from a taco stand in Brooklyn. Mexicue, usually located in the Financial district in downtown Manhattan, offers a twist to the traditional Mexican taco. Order a bowl of rice -- under which they layer at paprika and lime for some extra kick -- and top it with barbecued beef, jalapenos, cilantro cream. Get a side of tortilla chips and you will not be disappointed. Seriously, it's very tasty. Extra points to Mexicue for also serving great chili! (credit:DNAinfo/Carla Zanoni )
Tacos El Idolo (New York City)(05 of08)

Arguably the best taco truck in NYC, "Tacos El idolo" is a staple of downtown Manhattan. We recommend the taco arabe. Albeit not the most Mexican-sounding taco around, it's really tasty. Rositas Al Pastor (Austin) (06 of08)

It's hard to compete for recognition in a city that is flat-out food truck awesome and is furthermore, home to some of the very best tacos in the whole country. But, Rosita's Al Pastor puts up a good fight for best taco truck in Austin. With homemade flour tortillas and top quality tacos al pastor, this is pure Mexican deliciousness. Honest Tom's Tacos (Philadelphia) (07 of08)

Usually parked outside Drexel's campus in Philadelphia, "Honest Tom's Tacos" is hard to miss. Not too many taco trucks proudly sport such a psychedelic decor. The menu is limited -- only one or two types of tacos per day -- but by all accounts, their fish tacos are so good, you won't miss the others! (credit:flickr:aetchells )

Although not exactly a taco truck, the Taco Bus makes it onto our list not just because it offers some quality Mexican food (we recommend the pork marinated in achiote taco) but mostly because of their awesome sign welcoming customers. Hand written on it's side, the Taco Bus slogan reads: "Broken English Spoken Perfectly." The story goes that the Taco Bus once travelled across the country serving Mexican food until twenty years ago its owner decided to settle down.
