If you're a fan of fluffy pancakes, you've got to try the Dutch baby pancake. The Dutch baby (also known as the German pancake or a Dutch puff) is a sort of sweet popover meets breakfast pancake. And, you get to eat it for breakfast.
Made in a cast iron skillet, but baked in the oven, this sweet breakfast indulgence fluffs up to great heights when done. While it does deflate once you're ready to eat it, all that airiness keeps this pancake nice and fluffy. The Dutch pancake is commonly served plain, with nothing more than a squeeze of lemon and a dusting of confectioners sugar. But you can't go wrong topping it with fruit and chocolate either.
