If you're like us, you've eaten your fair share of spinach pie. Common on so many diner menus (the good ones at least), it's hard not to love these feta-and-spinach filled flaky pastries. But the Greeks aren't the only ones making great spinach pie. Palestinian spinach pie deserves some culinary attention too.
Palestinian spinach pie recipes skip the feta and add in lemon and sumac for flavor. The dough is not your typical phyllo dough -- which can be a little intimidating to work with -- but an olive-oil rich dough that's just like pie crust. There's no reason not to make these at home.
