While marzipan isn't as popular in the U.S. as it is in Europe, we're starting a personal campaign to fix this grave oversight. Marzipan is essentially just a concentrated paste of two of our favorite things: almonds and sugar. And while it's often rolled, shaped and painted into all kinds of cute shapes to be eaten plain, marzipan also makes an amazing ingredient in baked goods.

If you've never had a marzipan pear tart, you need to take yourself to the nearest French bakery and try one right now. It will change your life. But if that's not an option, the recipes below make a great substitute.
